Grupo El Buo was born from a simple idea: the traditional tavern with good produce and a warm welcome. What began as a single location has grown into nine taverns across Madrid and Castilla-La Mancha.
We keep the recipes of always — filled omelettes, homemade croquettes, sharing plates — and bring them to spaces with their own character. Each location has its neighbourhood, its regulars, its rhythm.
We work with local produce, cook to order and take care of every detail of service. That is what binds us.

Santiago Villar Llamas founded the first Taberna «El Bu» in 1970, in Villanueva de la Fuente, Ciudad Real. The name comes from the nickname his neighbours and friends had given him in town. A family business was born.
Over the years, locals started calling him «Buo» — and his wife, «Buha». When his son and grandson opened the next venues, they named them «La Buha y El Buo» in tribute to their parents and grandparents.
Yes, we know «owl» in Spanish carries an «h». But «Buo» isn't any owl: it comes from a nickname, and nicknames don't bow to spelling rules.
